Here is the way I sharpen a knife. I think it's the best way. I use diamond stones all the way up to 8000 grit. Each knife is evaluated as to the best angle for the use of the knife. I try NOT to change the angle profile unless it is specified.

You need to wipe off and oil your knife after use. This is really important with high carbon steels. High carbon will rust if not taken care of. treat your knife just like you would your gun. Don't leave it laying in the sink. Any type of oil will work.
